Peace upon u all. according to Arabic grammar ASSALAM U ALEKUM is to greet more than 2 people as u know 2 is not plural in arabic its rather TASNIAH, which means 2, so how come plural greetings to a single or 2 persons?

Dear Hameed Khattak ! The essence to utter “Assalamu alaikum” is to be peaceful to every one. No matter in any language or in any symbol. You may say “ASTRAY MASHAY" in pashto.

I believe it is simply an unquestioned and time honored tradition. But you are correct, to greet one person should be "ASSalam u aleika (male) aleikee (female)" and to greet two people would be "Asalam u Aleikumaa"  
 
However, this is an Arabic greeting and since Arabic is not my mother tongue I see no kind of obligation to greet others in Arabic. I like to simply say "Peace" or "Peace be upon you".

To call someone in plural is a speech form that is used in many languages to offer respects to the addressee. We do that in Urdu as well. Dignitaries in many cultures are addressed in plural by lower cadres and 'they' too speak about themselves in plural form.  
 
This might explain the plural Zameer for a single Mukhatib in "Assalamu Alayikum".
